Meal planning while on a semi strict food budget can definitely get tricky. I am trying to grocery shop every two weeks, and on the weeks I’m not shopping, meal planning out my pantry. It allows me to use food I already have and get creative in the kitchen. This is one of those weeks where shopping is not an option!
Breakfast is pretty easy for us both. We do coffee with a plant-based protein powder. I also include a greek yogurt with chia seeds and Tyler has a yogurt with fruit. This week I cut up a watermelon for him to snack on in the morning and throughout the day. He is so excited for warmer months because that means he gets big containers of watermelon and cantaloupe.
Lunch is the bigger meal for both of us, I try to stick with one protein and veggies. My go to is chicken breast (prepared however) and green beans. I try to vary Tyler’s lunch each week. So for this week, I will be making Tyler a healthy and easy chicken stir fry for lunch.
To make my healthy stir fry I first start with:
1 package of riced cauliflower
2 packages of frozen veggies (we used an Asian stir fry blend)
I season the veggies with some ginger, garlic, coconut aminos, and soy sauce and cook them following the package heating instructions.
Next, I place 3 frozen chicken breast seasoned with ginger, garlic, salt and pepper in a 400 degree oven for 30-40 minutes.
Finally, I divide the riced cauliflower and veggies into daily serving containers.
Cut the chicken and divide into containers. That’s it!
Snacks for myself usually consist of an apple or a Graze snack. I like Graze snacks because it keeps me from overeating.
